CHICKEN WITH WALNUTS

2 Whole chicken breasts, boned & skinned (about 1 lb), cut into 1" pieces
1 each Egg white
1 tablespoo Cornstarch
to taste Salt
½ teaspoon Sugar
1 cup Peanut, vegetable, or corn oil
1 cup Whole walnut halves
3 Thin slices fresh ginger, peeled
4 each Garlic cloves, flattened
8 each Hot dried red peppers
1 tablespoon Dark soy sauce
1 tablespoon Dry sherry or shao hsing wine

  • Marinate chicken in egg white and sugar.
  • Deep fry and remove.
  • Fry walnuts until golden.  Remove oil.
  • Stir fry veg.  Finish with soy and wine.
  • Pour and serve.
