Classic Sugar Cookies

Makes 2-3 dozen cookies
2 cups flour
1 tsp baking powder
¼ tsp salt
5 ounces (10 tbs) unsalted butter, softened
¾ cup sugar
1 egg
1 ½ tsp vanilla extract

1. Combine the flour, baking powder, and salt with a whisk. Beat butter and sugar with an electric mixer until creamy. Add egg and vanilla. Add flour mixture until combined, then divide the dough into 2 disks and chill 2 hours or overnight.
2. Roll dough and cut into shapes. Bake on ungreased cookie sheets in a preheated 350° oven until edges are golden, about 7-9 minutes. Cool on sheets 5 minutes, then transfer to racks to cool completely. Decorate as desired.
