Improvisational
Vinaigrette
1 tablespoon good quality vinegar
1 clove garlic or 1 shallot, minced
1 teaspoon Dijon mustard
1 teaspoon dried herbs or 1tablespoon fresh chopped herbs
3 tablespoons good quality oil
sea salt and freshly ground pepper, to taste
Whisk together the vinegar, shallot, mustard, and herbs, then whisk in the
oil. Season to taste with salt and pepper. Toss with 4 cups spring greens
and serve at once.
