WINTER VEGETABLE HASH AND SWEET POTATO GRAVY

Vegetable Hash

2T grapeseed oil
1 medium onion, diced
2 cups brussel sprouts, sliced thin
1 red pepper, diced
1 cup sweet corn
1T fresh thyme
½ t salt
½ t cracked black pepper

Heat a large skillet over medium heat. Add oil and onion and sauté for 1 minute, add brussel sprouts and cook for 10 minutes. Add red pepper, corn, thyme, salt and pepper and cook for 5 more minutes.

Sweet Potato Gravy

1T grapeseed oil
½ onion, diced
1 ½ t chipotle pepper flakes
1 large sweet potato
2c chicken stock

Heat a sauce pan over medium high heat add oil and onion charring the outside of the onion slightly. Add remaining ingredients and simmer until potatoes are tender, purée in blender and serve over vegetable hash and poached eggs.
