Guacamole

Yield: 4 servings as an appetizer
Active time: 15 minutes
Start to finish: 15 minutes

3 avocados
Lime juice to taste
Salt to taste
1 jalapeño, minced
2 tablespoons cilantro, rough chopped
2 plum tomatoes, small dice
Vegetable chips (Carrots, Cucumbers and Jicama)

  1. Remove the meat from the avocado and place in a bowl.

  2. Add lime juice and salt to taste.

  3. Mash this mixture with either a fork or potato masher until smooth.

  4. Fold in the jalapeño, cilantro and tomatoes and serve with the vegetable chips.
